About the Venue – The Saloon Bar | Mr Fogg’s Hat Tavern
The CISO 360 Jingle and Mingle takes place in the Saloon Bar at Mr Fogg’s Hat Tavern, a hideaway below the tavern itself. Gold leaf ceilings, bronze lighting and hat makers’ display cases line an intimate room, with a bar built from a repurposed milliners’ bench at its centre. Drinks run from pints to punches to properly made cocktails, and the space is ours for the evening.
A milliner’s bench is a place of judgement as much as craft: the tools are laid out, the blocks are set, but the decision about what to keep and what to cut is made by hand, by someone who has done it enough times to know. That is the question agentic tooling now puts to the SOC. As attack timelines compress and decisions outrun the human review cycle, which signals can be relied on, what is genuinely running versus still in pilot, and how much autonomous action a security leader is prepared to authorise.
